| Chinese Rice with Vegetables |

1 cup uncooked white rice* 2 cups water 2 tablespoons soy sauce 1 tablespoon vegetable oil 2 cups any combination of : fresh or frozen peas frozen mixed vegetables julienned carrots sliced mushrooms chopped green pepper shredded cabbage broccoli flowerets sliced green beans Ground black pepper Salt (optional) Combine rice, water, soy sauce and oil in 2 to 3-quart saucepan. Bring to a boil. Stir once or twice. Reduce heat, cover, and simmer 15 minutes*. Add vegetables. Cover; simmer 5 minutes or until rice and vegetables are tender and liquid is absorbed. Season to taste. Makes 6 Servings. * If using brown rice, increase water to 2-1/4 cups and simmer for 45 minutes. If using parboiled rice, simmer for 20 minutes. |
